OVERVIEW OF KEY GAS APPLICATIONS IN THE BEVERAGE INDUSTRY

In the beverage industry, many crucial processes are only possible with the support of specialized gases. Among them, carbonation of soft drinks and beer is the most prominent application, utilized for over a century. Additionally, gas helps protect product quality through tank inerting and filling processes. Without Nitrogen (N₂) to stabilize pressure, preserving and transporting non-carbonated beverages would be much more complex and costly.

Carbon dioxide (CO₂) has been used in mineral water and beer production since 1879. Besides CO₂, inert gases such as Nitrogen (N₂) and Argon (Ar) play indispensable roles in removing oxygen and stabilizing pressure throughout the manufacturing process.

💡 Gases Do Much More Than That

Carbon Dioxide Gas (CO₂): A colorless, odorless gas that dissolves easily in water. At high concentrations, CO₂ has a bacteriostatic effect, extending beverage shelf life. Rising CO₂ bubbles help displace air at the surface, thereby reducing oxidation. In dry ice form (-78°C), each kg of CO₂ provides over 570 kJ of cooling energy.

Nitrogen (N₂) & Argon (Ar): Have very low solubility in water, are neutral, colorless, odorless, and non-toxic. They are used to purge Oxygen from containers, preventing oxidative spoilage. Conversely, Oxygen (O₂) is applied in precise doses for controlled oxidation in winemaking.

⚙️ Technical Solutions for Gas Applications

  • 🥤 Carbonation: Dissolving CO₂ into liquids like beer (~5g/l), soft drinks (5–9g/l), and sparkling wine (~2.5g/l) creates refreshing effervescence.
  • 🫧 Sparging: Introducing fine gas bubbles into liquids via porous metal injectors to maximize contact surface area and gas dissolution speed.
  • 🛡️ Inerting & Blanketing: Replacing air/Oxygen in storage tanks with Nitrogen, CO₂, or Argon to preserve taste, color, and product quality.
  • 🧪 Stripping: Using fine Nitrogen gas streams to sweep and remove dissolved oxygen completely from water, fruit juices, or wine.
  • 🍾 Counter-pressure Filling: Applying overpressure or vacuum techniques to minimize Oxygen mixing into bottles during packaging.
  • 🥫 PET Bottle & Can Pressure Stabilization: Dosing liquid Nitrogen droplets before capping. Nitrogen evaporation increases internal pressure, making cans and PET bottles rigid for easy stacking during transport.
